• the bacteria and other microorganisms act in anaerobic conditions to change complex sugars into alcohol.

• in case of humans, there is fermentation of lactic acid by our muscle cells.

◆ how is fermentation useful in food and beverage industries?

• bacteria and yeast can help in making alcohols which are certainly consumed by many people.
• these are used in medicines too.
• moreover, some alcohols have special uses for example stain removing agent is ethyl alcohol.

Fermentation is the ‘chemical breakdown’ of a substance into its simpler substances by bacteria or fungus with heat generation. This fermentation aids in the formation of ‘alcohols and organic acids’ from the breakdown of carbohydrates, this thereby helps the food and the beverage industry at an accelerated rate.

The fermentation of fruit juices yields alcohol, that of grains help in the formation of beer and the fermentation of starch rich substances yield vodka.
