Fermentation is a metabolic processthat consumes sugar in the absence of oxygen. The products are organic acids, gases or alcohol . It occurs in yeast and bacteria and also in oxygen starved muscle cells as in lactic acid fermentation.
Use of this in food and beverage industry...
Food -
*we know that fungi like yeast reproduces rapidly and produces carbon dioxide.
* This gas when trapped in dough or batter (used for idli,dosa)causes it to increase in volume and makes it fluffy and soft.
* This process is maximum utilized in bakery.
Beverage industry-
* Many microorganisms are used in the alcohol, wine, acetic acid.
* Fungi like yeast convert natural sugars present in cereals and fruits into alcohol which is then used to make alcoholic beverages.
* Acetic acid commonly known as vinegar is also produced by similar process.
