Hydrogenation is a process in which hydrogen is added to the oil.

You can find the difference between hydrogenated oils and the ordinary oil.Take the Nihar oil and the mustard oil in a bowl and leave them for half an hour. You will find that the Nihar oil will become a bit solid but the mustard oil will as it was before.It is because the Nihar coconut oil is hydrogenated.
