De-starching means removing starch from the leaves of the plant
plants are kept in dark to destarch the plant because in the dark there will be no sunlight such that plant cannot get sunlight and in the absance of sunlight plant cannot prepare starch
In this way plants are kept in dark to remove starch

hey there! here is ur answer! Hope it helps!
De-starching refers to a part of a plant being deprived of starch.
It also refers to the process of eliminating starch in a plant part.
Now, starch is an internal energy reserve of the plant,ie, plant stores food in the form of starch. starch is a more complex form of glucose.
when a plant is kept in darkness for about 2 days, it would not have access to sunlight which is very important for the process of photosynthesis (and making glucose). since there is no sunlight, no glucose will be made and hence starch is deprived. therefore the plant becomes De-starched
