Nixtamalization- It is a process of preparation of maize or other grains in which the corn is soaked in an alkaline solution and then hulled.

Pellagra- A disease due to the deficiency of nicotinamide (Vitamin B3).

As maize proteins are less rich in tryptophan so due to this there is deficiency of tryptophan in the body.

And this leads to poor production of nicotinamide and hence it causes Pellagra.
