That is, no one is smelling the rose. Nor the rose is smelling anything. No subject; no object. Smell is a linking verb ( copular verb) here which links the rose to its complement sweet.
Linking verbs are intransitive. They do not take an object. They only have a subject complement following them, which can be an adjective or a noun.
