Pasteurization or pasteurisation is a process in which certain packaged and non-packaged foods (such as milk and fruit juice) are treated with mild heat, usually less than 100 °C (212 °F), to eliminate pathogens and extend shelf life.

Pasteurisation is ' pressurised heating ' for a short time it may be considered as a milled form of heat treatment . The temperature used during pasteurization is below 212°F (100°C). Milk is pasteurized to destroy microorganism however there are many more heat resistant organism in it that only get reduced in number . Hence , pasteurization milk need to be stored under free generation ki bacterial growth in check .

In addition to destroy some micro organism , pasteurization also inactive some enzymes ; that at times , can be a disadvantage. in simple words specialisation refers to a method of preserving milk by heating it to 72 °C followed by a quick cooling.
