it is the contraction of the protoplast of a plant cell as a result of loss of water from the cell.

Hey !!
When plant cell is placed in hypertonic solution, the fluid from the plant cell comes out and the cell shrinks. This phenomenon is called plasmolysis and is due to osmosis.
