The condition produced by aerial oxidation of fats and oils in food marked by unpleasant smell and taste is called rancidity.

Oxidation has damaging effect on food containing fats and oils. When the fats and oil present in food material get oxidised by the oxygen, their oxidation products have unpleasant smell and taste.

We can prevent rancidity by :

1) Adding antioxidants to food containing fats and oils.

2) Packaging fat and oil containing foods in Nitrogen gas.

3) Keeping food in refrigerator (reducing the temperature).

4) Storing food in airtight containers.

5) Storing food away from light.
