The oxidation of oils or fats in a food resulting into a bad smell and bad taste is called rancidity... This can be prevented by adding anti oxidants, vacuum packing, replacing air by nitrogen and refrigeration of food stuff...

The oxidation of fats results in the foul/bad smell of the food such a condition is known to be rancidity. This can be prevented in various ways such as:-

1) by storing cooking oils out of direct light,
2) by putting/storing the cooking oils in a cool area
3) reducing the use of salt in a fried foods, if you wish to reuse the oil second time
