Rancidification is the process of complete or incomplete oxidation or hydrolysis of fats and oils when exposed to air, light, or moisture or by bacterial action, resulting in unpleasant taste and odor. Specifically, it is the hydrolysisor autoxidation of fats into short-chain aldehydes and ketones, which are objectionable in taste and odor.[1] When these processes occur in food, undesirable odors and flavors can result. In certain cases, however, the flavors can be desirable (as in aged cheeses).[2] In processed meats, these flavors are collectively known as warmed-over flavor. Rancidification can also detract from the nutritional value of food, as some vitaminsare sensitive to oxidation.[3] Similar to rancidification, oxidative degradation also occurs in other hydrocarbons, such as lubricating oils, fuels, and mechanical cutting fluids.[4]
Rancidity is a condition in which the substance with oil and fats get oxidized when they are exposed to air. A substance is said to be rancid when there is a change in smell, taste, and colour.
Example of rancidity is when a chips pack is exposed to atmospheric air which results in a change in taste and odor.
