Baking powder is made up of sodium bicarbonate and one or more acid salts such as monocalciumphosphate and or sodium aluminum sulfate. Some formulas can use tartaric acid.The point is that these weak acids activate the baking soda. This is why recipes that contain acidic ingredients only call for baking soda as a leavening agent. These acidic items / ingredients might be lemon juice, vinegar, butter milk and the like.
