What is the general name of the chemicals which are added to fat and oils containing foods to prevent rancidity?

anti- oxidants are the chemicals that prevent rancidity. They are actually reducing agents.When they are added to foods then the fats and oils present in them don't get oxidised easily and hence don't turn rancid.
