Sea water contains a lot of salt. Fish can survive in varying levels of salt, as salt can mess with osmosis of water.
If water is salty on one side of a barrier, and pure on the other, then the water will cross the barrier to try to equalize the imbalance.
So if a freshwater fish is put in salt water, it will quickly lose water through its body. Basically, water will just be sucked out of it through its gills. Same reason why we cannot drink sea water; it will just make us lose more water as urine.
Saltwater fish, on the other hand, are in a kind of equilibrium with the salinity of their surroundings. If they are put in fresh water, they will absorb too much water through their gills and kind of drown.
Some fish can survive in both, by being able to control this chemistry. Look at salmon and bull sharks and other estuary fish for example, but these need time to adapt to changes and will also die if they're just dunked into new water.
