What is the role of fuse used in series with any electrical appliance why should a fuse with defined rating not be placed by one with the larger rating

Most of the electrical appliances have cutoff voltage within which it will work ,if the voltage is more compared to it there are the chances that the appliance gets damaged .So in AC voltage supply the voltage varies greatly, so to prevent such voltage damaging the appliance the fuses are used.
Fuses are designrd such that it will be having a cutoff voltage ,if voltage increases its wire braks and current supply stops and hence prevents damage of appliance.
But if the fuse with cutoff ore than required is used high voltage flows easily through the fuse and the appliance dies
