it helps in the moistening the food and helps to create a food bolus.
it mixes up with the food, makes it soft and thus helps in swallowing the food.
it also helps in protecting the teeth and gums from bacterial infection by stopping bacterial growth.
it helps in spreading the taste of the food all around the mouth.
