The lipase secreted by pancreas act on the fat globules and reduce them to tiny droplets, which provide larger surface area on which the enzyme can act upon to digest fats into fatty acids and glycerol

It is necessary as it is difficult for the enzymes (lipases) to act on large fatglobules. ✴Emulsion of fats increases the efficiency of enzyme action to break down fats into fatty acids and glycerol which are easily absorbed through small intestines.
