Explanation:

Staples are maize and other cereals depending on the region, including millet and sorghum eaten with various meats and vegetables. The foods that are universally eaten in Kenya are ugali, sukuma wiki, and nyama choma.

Most of these are common to both countries, but my experience is largely limited to Tanzania.

Fried Muhogo (Cassava). Goes very well with Kachumbari (closest thing I can think of is Pico De Gallo).

Nyama Choma, loosely translated as grilled meat. Commonly made with goat or beef. Also goes well with Kachumbari and some fried plantain.

Samaki (Fish) or Kuku (Chicken) wa Kupaka (in coconut curry). This is my favorite dish. Goes well with Ugali (cornmeal mash), or some tandoori-naan.

Chicken Sekela on the streets of Dar-es-salaam. This is chicken marinated for hours in Indian/Tanzanian spices and then charcoal-grilled.

You can top these off with some Tanzanian desserts paired with tea. Common ones include Vitumbua, Mandazi, Kashata, etc.
