In most cases, render farm servers will use Intel Xeon series CPUs and, if they offer GPU rendering, they will have NVidia GPUs. The configurations can vary greatly, but to give you an example on RenderStreet we use servers with dual Xeon E5 series, and the GPU ones have dual Tesla M2050 boards.
