What led to the development of one-crop economies?

I am not sure the concept I am putting forward is the single way, but with my passion for food, farming and various cultures, it has been fairly well circulated in lots of books, etc.

Commercial crops were commercial before money. It was what people found valuable and would trade for. Some of the origins come from not being able to grow things everywhere. This happened with crops and livestock as neighbors would trade and probably conceptually goes back to native plants.

As people explored the world, they would discover things indigenous to other areas and bring them home. Tea is a great example of a crop that was common in one part of the world and commercialized heavily via trade. It wasn’t just a basic staple but something extra and having it showed you had means beyond land.

As cities have developed and more people pursue other professions, that meant fewer people were growing their food and basic staples (corn, rice, wheat, potatoes, etc) those crops also became commercial crops.
