hey, ^^

the same things that causes growth in them today. They’re hubs of commerce and other services, which attracts people from the surrounding area to live there in search of better lives.

A few people start growing food or selling basic goods on a valuable ford, trade route, defensible or fertile area. Seeing how good they have it more people choose to live with them. Those people need to live too so they offer whatever services they can. As the market and general prosperity increases people can afford to pay for luxuries, allowing for less survival focused jobs. This encourages more people to move in as well.
