What role do markets play in the expansion of non farm activities?

As an ex bank agric economist in the UK, who was responsible for working out the merits of each wierd and wonderful non agricultural craze that became available, I came to realise that the mantra of diversification out of agriculture is all about the continued production of cheap food, in this case by subsidising non economic farms with Bed and Breakfast / horse riding/ farm shops etc, etc
