Saliva present in the mouth changes the starch present in the food into simpler sugars which are easy to digest

1) It moistens and lubricates the mouth cavity and the tongue to make swallowing easy

2)It acts as a solvent , dissolving some part of food to stimulate taste

3)It initiates digestion by converting starch into maltose
