It’s a chemical change.

Micro-organisms need glucose to power their bodies - and they convert each molecule of sugar into carbon dioxide and ethanol…which is the alcohol found in wine and beer. A side-effect of that is to produce energy that the organism needs to keep on doing whatever it does.

In a chemical change, molecules that you had at the start of the process are converted into molecules of some different substance.

In physical change, the molecules you started with are all still present at the end of the process.
