Airliners can fly up to 40000 feet. The atmosphere at that altitude is thin, meaning the lack of pressure would kill you in minutes. To counteract this, the cabins on modern airliners are pressurized in order to enable the passengers to breathe.

However , it is neither feasible nor economical to bring the cabin pressure to what you’d find at sea level. Pressure inside the cabin is typically around 0.8 bar (what you’d find around 6000–8000 feet).

This means that there is less pressure applied against your bag of chips, allowing the nitrogen inside to expand, causing the effect you observed.
