If we use water instead of mercury in thermometers, inaccurate and discrepant results will occur due to the following reasons.  

(1) Water is volatile and if heat crosses its vapour point, the water will evaporate giving total inaccuracy in results.  

(2) Water has a tendency to stick to the walls of the thermometer which will give incorrect results.  

(3) Mercury is seen easily but it is not the case with water as it is transparent, so it will be difficult to take in readings.
