the gas evolved is carbon dioxide
It also forms water and another salt

We know that when acid reacts with metal carbonate it form salt and co2 and water
Hence
As
Lemon is acid and baking soda is metal carbonate (na2hco3)
Therefore on mixing baking soda with lemon co2 is formed so bubbles is seen
