When cut pieces of beet root are boiled in water, the water turns red but when the pieces of carrot are boiled the water reamens colourless .WHY??????

it depends on the pigment present in both ..
the pigment in beetroot had strong antioxidants......that's why it oozes out when cut ..hope this may help you

when a piece of beetroot are boiled in water then it turns red due to presence of water soluble pigment anthocyanins beetroot carrot have fat soluble pigment carotene which does not dissolve in water and therefore water remain colourless
