When dehydratef fruits and vegetables ate placed in water they slowly swell and return.to original form why?

Generally fruits and vegetables become shrunken due to loss of water hence when they are placed in water.

As they have semi-permiable membrane it allows diffusion of water into the dehydrated cells thereby causing fruits and vegetables to get swollen..
