Plasmolysis is the shrinking of the cytoplasm of a plant cell in response to diffusion of water out of the cell and into a high salt concentration solution. During plasmolysis, the cell membrane pulls away from the cell wall. This does not happen in low salt concentration because of the rigid cell wall.

Plasmolysis occurs when the plant cell is pllaced in a hypertonic solutionlike concentrated sugar or salt solution.

Plasmolysis is the phenomenon of shrinkage of the protoplasm away from the cell wall when a cell is placed in a hypertonic media. A hypertonic media is defined as the media which has higher solute concentration than the solute concentration of the cell sap. When a cell is kept in hypertonic solution, the water from the cell starts moving out as a result of osmosis i.e. the movement of solvent molecule along their concentration gradient across the semi permeable membrane. Due to the exosmosis of water the protoplasm shrink and moves away from the cell wall. This condition can be reversed if the cell is kept in a  hypotonic media before it is dead.
