Its because when iron rod is dipped in copper sulphate solution ( blue in colour ) it displaces the copper from the solution and form Iron sulphate which is green in colour.
Fe + CuSO4 --------------> FeSO4 + Cu
Fe + CuSO4 --------------> FeSO4 + Cu
