when the particles move parallelin longitudinal waves why are sound waves illustrated up and down, to and fro the mean position like transverse waves?

the disturbance is produced from the point where particle has strike and the energy is transferred from one to another without the change in the position and particles after transferring energy come back to mean position due to elasticity
