when we cut beetroot; colour will be seen out.. but when we cut carrot;no colour will seen to our hands.. y??

beet root has a pigment called anthocyanin which is water soluble.this anthocyanin is present in the cytoplasm.so when beet root is boiled in water then it turns red.but in case of carrot it is not water soluble therefore wate remains colourless when carrot is boiled
