The process of digestion of fats takes place in a series of steps.  The large "fat globules" are broken into smaller ones by the "bile juice" secreted by the 'liver'. This process is called emulsification.

These small fat molecules are then broken down by lipase enzymes found in the pancreatic juice. The fats get converted to mono-glycerides and fatty acids that are easy to digest.
