First I'll be using ethanol and ethanoic acid with a dehydrating agent like sulphuric acid to produce the ester ethyl ethanoate......

CH3COOH + C2H5OH -----> CH3COOC2H5.

Then I'll treat this ethyl ethanoate with sodium hydroxide to get sodium ethanoate.

CH3COOC2H5 + NaOH ----> CH3COONa + C2H5OH.

This is saponification reaction and the obtained CH3COONa is soap.

Also ethanoic acid reacts with sodium hydrogen carbonate/sodium bicarbonate to form Sodium ethanoate.

CH3COOH + NaHCO3 -----> CH3COONa + H2O + CO2.

Note:Sodium hydrogen carbonate and sodium bicarbonate both are same with formula NaHCO3.
