Under the precondition that there are no other substances like some ions that may give us different colours, the colour of the flame would depend on the amount of oxygen available.

So let's say it's burning in air at STP. The colour would be from blue at the bottom to yellow, red, and IR at the top. Since the acceleration of charged particle is the greatest at the bottom. As the energy being passed upward, it is lost as electromagnetic radiation to the surroundings, which is the light you see. Thus the acceleration of the charged particles decreases as we ascend the flame and the frequency of the radiation decreases (that's why we have colour changes!).

The flame would get generally more blue if we increase the amount of oxygen
