Technically it will not permanently damage your pen. However, food colourig will go off, and as such will mould in a pen. Leadng to clogging.
So if you use it in a bottle of ink, without sterilizing the pen, it will contaminate the bottle.
If you absolutely NEEDED to write something and had no other choice but to use food colouring, and then cleaned the pen WELL with some sort of ammonia/water (10%/90%) solution, then your pen would survive.
But it should be pointed out that the cost per ml, is probably so close, you would be better using ink.
I can't see a single advantage to using it.
