vegetable oil like ground nut oil are unsaturated hydrocarbons containing double bonds.They are liquid at room temperature . Due to presence of double bond, vegetable oil undergoes addition of hydrogen and is heated in presence of catalyst Nickel which converts oil into vegetable ghee that is vanaspati ghee.This process is called as hydrogenation of oils.
