According to pH values, water soluble pigments are flavonoids pigments. They turn red to blue.
These water soluble pigments occur in tissues of specific plants. In those plants, whose classification is identified in higher levels. Such as, in plant's fruit, flowers, stems, etc.
We see chlorophyll pigment in most of plants which gives the plant green colour.
