Mechanical harvesting is becoming available for processing crops but nearly all other crops are hand harvested (Fig. 17.5). Cabbages can be packed on rigs or harvested in to crates. Loose outer leaves are stripped back and the head cut leaving approximately 10–15 mm of stem. Variable maturity of cabbage means that fields may be harvested a number of times with usually three or more passes. In the summer the field may be harvested every three days and in autumn/winter every seven days. Cabbages can deteriorate in warm conditions and should be cooled rapidly after harvest. Long-term storage requires humidification equipment.
