The thermometer works on the principle of "zero'th law of Thermodynamics".

This law states that if two bodies are in thermal equilibrium with another body, then they must also be in thermal equilibrium with each other.

Now, when thermometer is placed in contact with a body with high temperature, then heat is transferred from the body to the thermometer untill and unless, thermal equilibrium is established between them. Thus, the thermometer slowly acquires the same temperature as the person's body, with this gain of heat, the Mercury in the thermometer rises as much as the temperature of the thermometer, thus also indicating the temperature of the person's body.
