Actually water is not digested. Nor does it have any nutritional value whatsoever. Still, what makes water so important is that it is the most essential transporting medium of the body. Water mixes with blood and helps it flow. From the blood, it dissolves the impurities into itself and filters out in the kidneys. This impure water is drained as urine. Again, as for digestion, water plays a vital role. By diluting the acid produced in the stomach, it helps to maintain proper acid base balance in the body. That is why if you don't drink water after consuming much oil, your stomach fills up with acidified, greasy food, and you end up vomiting acid. Water also helps in the movement of the chyme from stomach by making it soft. It makes excretion possible by loosening the stool and easing bowel movements. Water also contains some vital minerals necessary for the body.
In short, water "maintains the flow":-)
