the text format that you are referring to is a form of transcription type. As you have written and described it, it is strict verbatim transcription.
You could also have an intelligent transcription, where all the speakers are identified also, but ums, ans, utterances and unnecessary repetitive speech, are intelligently removed by transcriber.
