When we learn about amplitude in school, it is usually represented as a constant coefficient to a periodic function. A periodic function, by definition, has constant amplitude.

For most useful purposes, amplitude is not constant. In AM radio, the amplitude is modulated.

There is a strange symmetry between the two possibilities, which blurs the distinction and is the basis of the Heisenberg uncertainty principle. Take the extreme case of a recording of a song. The amplitude varies throughout the song. Or does it? How can it be measured or defined if it is constantly changing? It is possible to take the Fourier transform of an entire song. The longest component period is the length of the song (or is it twice the length?). Every component is a pure sinusoid having a constant amplitude for the duration of the song. The sum of those sinusoids recreates the song.
