Here's your answer....
While doing cooking, generally we add salt to vegetables ( contains water). As a result, due the process of OSMOSIS, water from vegetables comes outside making it softer and helps in faster cooking.

That because salt combines to form a solution which has higher density than that is present inside the vegetables. And fluid flows from lower density to higher density liquid until a balance is obtained.
