When an individual starts chopping onion, Lachrymatory synthase is produced in the air. This enzyme then turns the sulfoxides of onions into sulfenic acid. The sulfenic acid then transforms into syn-propanethial-S-oxide. This then gives stimulation to our eyes to release tears.
