Reason when gas from a cooking gas cylinder is used, the pressure does not fall appreciably till the last few minutes
- Using high pressure, the gas is held in liquid state within a cooking gas container.
- The boiling point of a liquid is a function of the pressure above its surface. The higher the pressure above the liquid, its boiling point will be greater.
- The vapour pressure inside the container reduces when the gas oven is turned on.
- To compensate for this pressure drop, more liquid undergoes a phase transition (vaporisation) to absorb the earlier pressure.
- In this way, at constant pressure, more and more gas evaporates from the liquefied state.
