while making cake or dhokla ,the Dough rises be cause of a substance that is produced during fermentation . what substance is this ? why does it cause the Dough to rise?

The substance used are organisms known as Yeast which multiply rapidly in number by the reprductive method of budding in anaerobic conditions ( no oxygen).
