The alluring complexion of the milk can inveigle many children and some of the pesty adults too. But, how did it got the colour?
It is due to a type of storage protein which occur in milk, eggs and seeds to nourish the young ones (children especially). The most important protein present in the milk is called as "casein protein". The storage protein also often occur as a food reserve also in many of them (again include) seeds, eggs and milk. These type of storage proteins have a globular structure and shape. Depending upon their solubility, reserve proteins are distinguished into four types- albumins (mostly present in eggs yolk and some pre-embryonic development phases), globulins (important in the completion of haemoglobin and other globular substances that include the globular structure and shape), prolamines (or prolamin are mainly found in heavy starch loaded plants, such as, oats, wheat, barely, sorghum, rice, etc.) and glutelins ( found primirarly in wheat, rice, etc. and it is also a major component in cereals).
