Why 1 + 1 = 2 but why not 3 or any other number ?

because it is the rule
and
the successor of 1 is also 2
and it is logic for e.g : if we take 1 stick and 1 more stick and join them together they are obviously going to make 2 sticks....
so 1+1=2
